Make Homemade Jam and Use it for Cooking.
My husband, a Japanese painter, went to Nagano prefecture to paint the autumn leaves.
He bought a lot of fruits as souvenirs.
The first one are apples.
They are Shinano Sweet and Jonagold.
There were about 3 varieties.
The second ones are grapes.
On the way back to Aichi prefecture, you can find Shiojiri, which is famous for producing grapes and wine.
It seems that the season for grapes has ended, so they were affordable price.
Both fruits are delicious when eaten raw.
However, if you make it into a jam, you can enjoy the taste.
I make apple jams often, but this is my first time to jam grapes.
Let’s Make Grape Jam
Remove the grapes one by one from the bunch.
Cut the grapes in half and seed.
Weigh the grapes and mix 35% – 40% granulated sugar with the grapes.
If left untouched, the grapes will drain and the granulated sugar will dissolve.
When it melts, heat it in the microwave at 600W for 10 minutes and then let it cool naturally.
When it cools down, repeat this process twice.
For jams, the balance between sweetness and sourness is important.
Add about 1 tablespoon of lemon juice (You can also use Pokka concentrated lemon juice).
Let’s make apple jam!
Cut apples into ⅛ slices without peeling.
As with grapes, mix 35% to 40% of the weight of the apple with sugar.
At this time, I used all the granulated sugar in the grapes, so I used millet sugar instead.
So the color turned brown.
When the sugar has melted and the water has come out, put the apples in a pot and bring to a boil.
When it boils, cover it and simmer over low heat for about 20 minutes.
Add 1 tablespoon of lemon juice and cinnamon powder and let the taste blend in.
Put each in a jar and it’s done.
Grape jam is usually put on yogurt and eaten every morning for breakfast.
Of course, it’s good to eat like this, but jam can also be used for cooking.
If you try using apple jam for cooking
Chicken Sauteed Apple Sauce
- First season the chicken with salt and pepper.
- Sprinkle the chicken with flour and bake it in a frying pan.
- After baking both sides, take it out and fry the onions in the remaining oil.
- When the onions are tender, season with red wine, wine vinegar (or just vinegar if wine vinegar is not available), mirin, and apple jam.
- Then add the apples and let it boil for a while.
Add the chicken in and simmer.
If you try using grape jam for cooking
Boiled Pork Loaf in Grape Sauce (I just imagined it.)
- First season the pork with salt and pepper.
- Put oil in a frying pan and bake the surface over high heat.
- Next, put water, consomme, onions, carrots and grape jam in a pot and apply high heat.
- When it boils, add the pork to simmer for about 15 minutes.
* Check the taste of the soup and add salt if it is not enough. (Add salt to taste.)
Grape is an ingredient in wine, so I think cooking with grape jam goes well with wine.
It’s the season when delicious apples are on the market.
